Alongside traditional bottom culture, farmers are experimenting with bed culture, as is common in France, and with suspended culture in nutrient-rich water.
Both methods promise concrete advantages: less farming ground needed, less loss during growth, and better use of spat collectors, the fittings young oyster larvae attach to before moving to a growing plot. For now, though, all of Zeeland's oyster farming remains bottom culture: the experiments aren't yet standard practice, but they're a sign that the sector, after everything it has been through, keeps looking for steadier ground.
What does this turning point mean for oyster farming today?
Thanks to the switch to the Japanese oyster and the spread of farming methods, oyster farming in Yerseke is more resilient than before the crisis, even though the sector is smaller than during its boom years.
Order a Zeeland oyster today and you're often eating a Japanese oyster that, thanks to this shift, still comes from Yerseke, rather than a sector that vanished after the crisis. That's maybe not the most romantic ending, but it is an honest one, and in the end a good one: the pit stayed in use, even though the oyster in it changed.
Why doesn't this page name a year or a death rate for this crisis?
Because we couldn't establish that year or that figure with any certainty. We'd rather leave an honest gap in the story than invent a number that sounds convincing but isn't true.
That's a deliberate choice, not carelessness. For much of Yerseke's older history, such as the earliest mention in 966 or the construction of ’t Burchtje around 1430, sharp dates do exist, because they were recorded in charters and archives. This later oyster crisis is different: the sources we could consult give the combination of causes (the barrier, the winter, the diseases) and the result (only six companies left), but not exact years, death rates, or the names of pathogens.
